In biological systems, hyperbolic surfaces are readily identifiable as critical to function. This talk will introduce a few interesting systems that motivate thinking in this direction, followed by a more formal mathematical process that aims to probe the realm of complicated three-dimensional structure, in particular highly tangled materials.
