There is quite a bit of online theory about openings. The best place to visit for any chess theory is the Exeter Chess Club coaching page: http://www.ex.ac.uk/~dregis/DR/coaching.html This is a vast site that provides much information on all phases of the game.

Sites on Opening Theory:
There are a couple of excellent sites for opening theory. The best is Online Openings Library: http://home.earthlink.net/~esuastegui/eschess/openings.html This site uses a Java applet to go through the opening moves, as well as providing commentary. Over 500 different openings are archived.
Another good site is MECCA: Chess Encyclopedia - Openings: http://www.serve.com/maskeret/mecca/openings.htm This site is what the Chess Openings Library is based on. A good selection of openings, but no graphical viewer, and no commentary.
Chess Analysis Online: http://www.chessworks.com/analysis/analysis.htm This is provided by NM Eric Schiller, and contains a large selection of analyzed unorthodox openings.
Diemer-Duhm Gambit pages: http://www.funet.fi/pub/doc/games/chess/ddg/ This site provides very in-depth analysis of this gambit that arises from the French opening.

The SAN Kit is a freeware ANSI C source programming toolkit for chess software authors and researchers. It consists of some twelve thousand lines of portable code that includes everything needed to write a chess-playing program except a search function and an evaluation function. A set of public, portable standards for move notation (SAN), position notation (FEN), and game notation are described and implemented.
SmartChess a chess tool for the Macintosh. You can get e.g. The SmartChess Reader (latest version 4.3) a free demo version of SmartChess that you can use as PGN Viewer/Reader (can also read ChessBase format) and as interface to fics or icc.
